BLUEBERRY MINI MUFFINS
130 g butter, soft
130 g sugar
150 g wheat flour
½ tbsp baking powder
200 g frozen blueberry
Icing sugar for topping.
Preheat oven to 190 degrees C.
Whisk butter with sugar in a bowl.
Add the eggs.
Blend baking power and flour and mix into the dough.
Defrost blueberry, strain og save the juice for icing. '
Stir the blueberry very lightly into the dough.
Fill the dough into silicone mini muffin molds.
Bake for 12 minutes.
Strain and mix icing sugar with blueberry juice.
Cool and put icing on the top.
